Fluffy Omelet With Asparagus Recipe

Ingredients
  • 1/2 tsp cayenne or paprika (see notes)
  • 1/2 tsp salt
  • 1 1/2 c shredded sharp cheddar cheese
  • 8 oz asparagus (see notes), rinsed & tough ends snapped off
  • 1/4 c milk
  • 8 large eggs, separated
  • 1 tbsp butter
  • 1/2 c all-purpose flour

Directions
  • Step #1 Cut asparagus into 1/2-inch lengths.
  • Step #2 In a 1 1/2- to 2-quart pan over high heat, bring 1 quart water to a boil.
  • Step #3 Add asparagus & cook this until bright green & just tender when pierced, about 2 mins.
  • Step #4 Drain, rinse with cold water, & drain again.
  • Step #5 Meanwhile, In a large-ish bowl, 1 1/4 c cheese, flour, cayenne, milk, mix egg yolks, & salt until well mixed.
  • Step #6 Stir in asparagus.
  • Step #7 In another large bowl, with a mixer on medium speed, beat egg whites until stiff peaks form.
  • Step #8 Spoon about a quarter of the whites into yolk mixture; stir this to mix.
  • Step #9 Scrape yolk mixture into bowl with remaining whites & fold together carefully just to mix; do not overmix.
  • Step #10 In an 11- to 12-inch nonstick, ovenproof frying pan over medium-high heat, melt butter; swirl pan to coat.
  • Step #11 Pour in egg mixture & smooth top this with a heatproof, flexible spatula.
  • Step #12 Cook until edges appear set & dry & bottom is browned (loosen edges with spatula to check), 7 to 8 mins.
  • Step #13 Transfer pan to oven & broil 4 to 6 inches from heat until omelet is puffed, & lightly browned, set, 3 to 5 mins.
  • Step #14 Sprinkle top evenly with remaining 1/4 c cheese; broil until cheese is melted & bubbling, 1 min longer.
  • Step #15 Serve at once from pan, spooning onto plates.
