Sweet Potato-pecan Pancakes Recipe

Ingredients
  • 2 1/4 tsps baking powder
  • 1/4 tsp salt
  • 1 1/4 c all-purpose flour
  • 1 tbsp vegetable oil
  • 1 c fat-free milk
  • 1 tsp vanilla extract
  • 1/4 c packed dark brown sugar
  • 1 (16-oz) can sweet potatoes or yams, drained & mashed (about 3/4 c)
  • 1/4 c sliced pecans, toasted & divided
  • 1 tsp pumpkin-pie spice
  • 2 large eggs, lightly beaten

Directions
  • Step #1 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #2 Combine flour, 2 tbsps pecans, pumpkin-pie spice, baking powder, & salt In a large-ish bowl.
  • Step #3 Combine milk & next 4 ingredients (milk through eggs); add to flour mixture, stirring until smooth.
  • Step #4 Stir in sweet potatoes.
  • Step #5 Spoon about 1/4 c batter onto a hot nonstick griddle or large nonstick skillet.
  • Step #6 Turn pancakes when tops are covered with bubbles & edges look cooked.
  • Step #7 Sprinkle top pancakes with 2 tbsps pecans.
