Brandied Prune Turnovers Recipe

Ingredients
  • 1 tbsp powdered sugar
  • 1 tsp cornstarch
  • 6 tbsps brown sugar
  •  Butter-flavored vegetable cooking spray
  • 6 tbsps sliced almonds or pecans, toasted
  • 2 c sliced pitted prunes (about 3/4 lb)
  • 1/2 c water
  • 12 sheets frozen phyllo dough, thawed
  • 1 tbsp water
  • 6 tbsps brandy

Directions
  • Step #1 Combine first 3 ingredients in a small saucepan; bring to a boil.
  • Step #2 Reduce heat; simmer, uncovered, 5 mins.
  • Step #3 Combine 1 tbsp water & cornstarch; stir well.
  • Step #4 Add cornstarch mixture to prune mixture; stir well.
  • Step #5 Stir in brown sugar.
  • Step #6 Bring to a boil, & cook 1 min, stirring constantly.
  • Step #7 Remove from heat, & let cool.
  • Step #8 Stir in nuts.
  • Step #9 Working with 1 phyllo sheet at a time, heavily coat each sheet with cooking spray.
  • Step #10 Stack 1 phyllo sheet on top of another; coat top sheet with cooking spray.
  • Step #11 Using a pizza cutter or scissors, cut stack lengthwise into 4 (3 1/2-inch-wide) strips.
  • Step #12 Spoon about 1 1/2 tbsps prune mixture on 1 short side of each phyllo strip, & fold left bottom corner over mixture forming a triangle.
  • Step #13 Keep folding back & forth into triangle to end of strip.
  • Step #14 Repeat with remaining sheets of phyllo.
  • Step #15 Place triangles, seam sides down, on a baking sheet coated with cooking spray.
  • Step #16 Lightly spray tops with cooking spray.
  • Step #17 Bake at 350° for 20 mins or until golden.
  • Step #18 Let cool completely on a wire rack.
  • Step #19 Sprinkle top with powdered sugar.
