Dolmas (stuffed Grape Leaves) Recipe

Ingredients
  • 1 (8 oz) jar grape leaves, drained & rinsed
  • 1 tsp ground allspice
  • 1 tbsp dried mint
  • 1 1/2 c uncooked white rice
  • 2 tbsps pine nuts
  • 2 tbsps tomato paste
  • 1 tsp ground cumin
  • 1 tbsp dried dill weed
  • 1 tbsp ground cinnamon
  • 2 onions, minced
  • 1 tbsp olive oil
  • 2 tbsps dried currants

Directions
  • Step #1 Heat oil in a medium saucepan over med-heat/flame.
  • Step #2 Saute onions until tender.
  • Step #3 Stir in rice & hot water to cover.
  • Step #4 Cover & let simmer until rice is half cooked, about 10 mins.
  • Step #5 Remove from heat & stir in the tomato paste, currants, dill weed, mint leaves, pine nuts, cinnamon, allspice & cumin.
  • Step #6 Let mixture cool.
  • Step #7 Prepare a large pot by placing an inverted plate on the bottom; this protects the dolmas from direct heat when steaming.
  • Step #8 Rinse grape leaves in warm water; drain & cut off any stems.
  • Step #9 Place about 1 tsp of the cooled rice mixture in the center of a leaf.
  • Step #10 Fold in the sides & then roll this into a cigar shape.
  • Step #11 Place in prepared pot.
  • Step #12 Repeat with remaining ingredients.
  • Step #13 Pour in just enough warm water to reach the bottom of the first layer of dolmas.
  • Step #14 Cover & let simmer over low heat/flame for 30 to 45 mins, or until rice is totally cooked.
  • Step #15 Check the water level often & add more as necessary.
