Spinach-ricotta Omelet Recipe

Ingredients
  • 1/4 tsp black pepper
  • 3 tsps olive oil, divided
  • 2 tbsps grated Parmesan cheese
  • 1 tbsp water
  • 1/4 c part-skim ricotta cheese
  • 3 large egg whites
  • 3 tbsps bottled salsa
  •  Additional salsa (optional)
  • 3 large eggs
  • 1/4 tsp salt
  • 1 (1/4 c) medium shallot, minced
  • 1 (6-oz) package fresh baby spinach

Directions
  • Step #1 Heat 1 tsp oil in 10-inch nonstick skillet over med-heat/flame.
  • Step #2 Add shallot; cook this until soft, stirring well.
  • Step #3 Add spinach; sauté until wilted (2 mins), stirring well.
  • Step #4 Transfer to bowl; stir in the ricotta & 3 tbsps salsa.
  • Step #5 Heat 2 tsps oil in skillet over med-heat/flame.
  • Step #6 Combine eggs, egg whites, & water in a bowl.
  • Step #7 Whisk until well-mixed.
  • Step #8 Add salt & pepper; whisk 5 seconds.
  • Step #9 Pour egg mixture into skillet; cook 10 seconds or until edges are set.
  • Step #10 Pull in cooked edges using a spatula; tip pan & rotate until there is just a little uncooked egg in the middle (about 5 mins).
  • Step #11 Add spinach mixture evenly to top of omelet; sprinkle with cheese.
  • Step #12 Cook 20 seconds; remove this from heat.
  • Step #13 Run spatula around omelet edges.
  • Step #14 Fold omelet in half, & let slide onto serving platter.
  • Step #15 Serve as soon as possible with extra salsa, if desired.
