Seared Salmon With Avocado, Shrimp, And Mango Salsa Recipe

Ingredients
  • 1 tbsp olive oil
  • 6 c gourmet salad greens
  • 4 (6-oz) salmon fillets (about 1 inch thick)
  • 2 tbsps fresh lime juice
  • 1/4 tsp salt
  •  Salmon:
  •  Cooking spray
  • 1/2 c medium shrimp, cooked & peeled
  •  Salsa:
  • 2 tbsps fresh lime juice
  • 1/8 tsp freshly ground black pepper
  • 2 tbsps sliced fresh cilantro
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 c cubed peeled ripe mango
  • 1/4 c sliced red onion
  • 1 peeled avocado, cut into 1/4-inch wedges
  • 1 jalapeño pepper, seeded & sliced

Directions
  • Step #1 To prepare salmon, heat a large nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #2 Sprinkle top fish with 1/4 tsp salt & 1/4 tsp black pepper.
  • Step #3 Add fish to pan, & cook for 9 mins or until the fish flakes easily when it is tested with a fork, turning once.
  • Step #4 To prepare salsa, mix mango & the next 6 ingredients (mango through jalapeño) in a medium bowl, & toss well to mix.
  • Step #5 Combine the salad greens, 1/8 tsp black pepper, 1/4 tsp salt, juice, & avocado wedges In a large-ish bowl; toss carefully to mix.
  • Step #6 Arrange a salmon fillet on each of 4 plates; top each with 1/2 c salsa & 1 1/2 c salad mixture.
