Banana-nut Bread Recipe

Ingredients
  • 1 tsp baking powder
  • 1/2 c sugar
  • 1 large egg, lightly beaten
  •  Vegetable cooking spray
  • 1 1/2 c whole wheat flour
  • 1 tsp baking soda
  • 4 medium-size ripe bananas, mashed
  • 1/2 c sliced walnuts, toasted
  • 2 tsps vanilla extract
  • 2 tbsps canola oil
  •  Light whipped cream cheese spread (optional)
  • 1 tsp ground cinnamon

Directions
  • Step #1 Stir together first 4 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #2 Stir together bananas & next 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.
  • Step #3 Gently fold in walnuts.
  • Step #4 Pour batter into a 9- x 5-inch loaf pan coated with cooking spray.
  • Step #5 Bake at 350° for 55 mins to 1 hr or until a wooden pick inserted in center comes out clean.
  • Step #6 Cool in pan on a wire rack 10 mins; remove this from pan, & cool completely on wire rack.
  • Step #7 Serve with light whipped cream cheese, if desired.
  • Step #8 Note: Nutritional analysis does not include cream cheese.
