Wild Mushroom-egg Bake Recipe

Ingredients
  • 1/4 tsp pepper
  • 1/4 tsp minced fresh thyme leaves
  • 1 1/2 c shredded havarti or jack cheese (about 4 oz.)
  • 1/2 c whipping cream
  • 6 large eggs, lightly beaten
  • 1/2 tsp dry mustard
  •  About 2 tbsps butter
  • 8 oz fresh morels or oyster mushrooms, cleaned & sliced
  • 1/4 tsp salt

Directions
  • Step #1 Preheat oven to 325°.
  • Step #2 In a large frying pan over high heat, melt 2 tbsps butter.
  • Step #3 Add mushrooms & cook, stirring often, until lightly browned, about 5 mins.
  • Step #4 Butter an 8-inch square baking dish & sprinkle cheese on the bottom.
  • Step #5 In a small bowl, thyme, mustard, salt, mix cream, & pepper.
  • Step #6 Pour half the cream mixture over the cheese.
  • Step #7 Top with mushrooms & eggs.
  • Step #8 Pour remaining cream mixture over the top.
  • Step #9 Bake until eggs are set, about 35 mins.
