Oatmeal Scones Recipe

Ingredients
  • 1 1/2 tbsps fat-free buttermilk
  • 1 large egg
  • 3/4 c uncooked quick-cooking oats
  • 1/2 tsp ground cinnamon
  •  Vegetable cooking spray
  • 2 tbsps sliced pecans, toasted
  • 2 tbsps cold butter, cut up
  • 1/2 tsp baking soda
  • 3 tbsps sugar
  • 2 tsps baking powder
  • 2/3 c fat-free buttermilk
  • 1/4 tsp salt
  • 1 3/4 c all-purpose flour
  • 1/3 c sugar

Directions
  • Step #1 Bake oats in a 15- x 10-inch jelly-roll pan at 400° for 6 mins or until lightly browned.
  • Step #2 Cool.
  • Step #3 Combine oats & next 5 ingredients.
  • Step #4 Cut butter into oats mixture with a pastry mixer or fork until crumbly.
  • Step #5 Stir together 2/3 c buttermilk & egg.
  • Step #6 Add to flour mixture, stirring just until dry ingredients are moistened & dough forms.
  • Step #7 Turn dough out onto a jelly-roll pan coated with cooking spray.
  • Step #8 Shape dough into a 7 1/2-inch circle.
  • Step #9 Combine 3 Tbsp.
  • Step #10 sugar & 1/2 tsp.
  • Step #11 cinnamon.
  • Step #12 Brush dough with 1 1/2 Tbsp.
  • Step #13 buttermilk.
  • Step #14 Sprinkle top with sugar mixture & pecans.
  • Step #15 Bake at 400° for 15 mins or until a wooden pick inserted in center comes out clean.
  • Step #16 Cut into 8 wedges; serve as soon as possible.
