Apple-pecan Breakfast Buns Recipe

Ingredients
  • 1 tbsp baking powder
  • 2 tbsps light corn syrup
  • 1 c pecan halves
  • 2 c all-purpose flour
  • 2 Granny Smith apples (about 12 oz. total)
  • 1/3 c raisins
  • 1 1/2 tsps ground cinnamon
  • 3/4 c milk
  • 3/4 c firmly packed brown sugar
  • 1/4 c (1/8 lb.) butter, chilled, plus 1/2 c (1/4 lb.)
  • 1/4 tsp ground nutmeg
  • 1/4 c sugar
  • 2 tsps grated lemon peel
  • 3/4 tsp salt

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 In a large bowl, sugar, baking powder, whisk together flour, salt, & lemon peel.
  • Step #3 Cut the 1/4 c chilled butter into 1/4-inch pieces.
  • Step #4 With a pastry mixer or your fingers, cut or rub butter into flour mixture until it resembles coarse meal.
  • Step #5 Pour in milk all at once; stir just until mixd.
  • Step #6 Cover up with plastic wrap & chill until cool, 10 to 15 mins.
  • Step #7 Meanwhile, in a 1 1/2- to 2-quart pan over medium-low heat, melt remaining 1/2 c butter.
  • Step #8 Stir in corn syrup, brown sugar, cinnamon, & nutmeg.
  • Step #9 Pour mixture into the bottom of an 8- by 8-inch baking pan.
  • Step #10 Sprinkle top pecans evenly over mixture.
  • Step #11 Peel & core apples & slice as thinly as possible.
  • Step #12 Turn dough onto a lightly floured surface.
  • Step #13 Knead about 15 times, adding just enough flour to keep dough from sticking.
  • Step #14 With a floured rolling pin, roll dough into a 12-inch square.
  • Step #15 Distribute apple slices & raisins over dough, leaving a 1-inch border along top edge.
  • Step #16 Working from the bottom, roll up dough, squeezing as you go; pinch edge to seal.
  • Step #17 Cut roll crosswise into 9 slices.
  • Step #18 Lay slices flat over syrup & pecans in pan.
  • Step #19 Bake until rolls are golden brown, about 30 mins.
  • Step #20 Invert a platter over pan and, holding both tightly together, invert again.
  • Step #21 Lift off pan & let rolls cool about 15 mins.
  • Step #22 Serve warm.
