Brie And Egg Strata Recipe

Ingredients
  • 1 c halved grape tomatoes
  • 1 c sliced red bell pepper
  • 4 oz Brie cheese, rind removed & sliced
  • 1 1/2 c sliced unpeeled Yukon gold potato (1 large)
  • 1/4 tsp freshly ground black pepper
  • 2 tbsps sliced fresh parsley
  • 2 tsps olive oil
  • 1 tsp salt, divided
  • 3 c 1% low-fat milk
  • 2 large eggs
  • 2 c sliced onion
  • 1 tsp herbes de Provence
  • 1 c egg substitute
  • 3/4 lb ciabatta, cut into 1-inch cubes, toasted
  •  Cooking spray

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add onion, potato, & bell pepper; sauté 4 mins or until tender.
  • Step #3 Stir in tomatoes; sauté 2 mins.
  • Step #4 Stir in 1/2 tsp salt.
  • Step #5 Combine onion mixture & bread.
  • Step #6 Place half of bread mixture into a 13 x 9-inch baking dish coated with cooking spray.
  • Step #7 Sprinkle top with half of Brie.
  • Step #8 Top with remaining bread mixture & remaining Brie.
  • Step #9 Place egg substitute & eggs in a medium bowl.
  • Step #10 Add remaining 1/2 tsp salt, herbes de Provence, & pepper.
  • Step #11 Add milk, stirring with a whisk until well mixed.
  • Step #12 Pour egg mixture over bread mixture.
  • Step #13 Let stand 30 mins.
  • Step #14 Preheat oven to 350°.
  • Step #15 Bake at 350° for 50 mins or until set.
  • Step #16 Sprinkle top with parsley.
  • Step #17 Serve as soon as possible.
