Ingredients
2 tbsps orange zest
8 slices bacon or ham, crisply cooked
2 tbsps sliced fresh tarragon
4 hard-cooked eggs, finely sliced
4 4-inch slices focaccia or hearty toast
2 lbs (about 24 spears) asparagus, cooked
2/3 c vinaigrette (bottled or homemade)
Directions
Step #1 Place 2 strips of bacon on each piece of focaccia & top this with some asparagus.
Step #2 Stir the tarragon & orange zest into the vinaigrette; drizzle over the asparagus.
Step #3 Top with the sliced eggs.
