Asparagus Mimosa Recipe

Ingredients
  • 2 tbsps orange zest
  • 8 slices bacon or ham, crisply cooked
  • 2 tbsps sliced fresh tarragon
  • 4 hard-cooked eggs, finely sliced
  • 4 4-inch slices focaccia or hearty toast
  • 2 lbs (about 24 spears) asparagus, cooked
  • 2/3 c vinaigrette (bottled or homemade)

Directions
  • Step #1 Place 2 strips of bacon on each piece of focaccia & top this with some asparagus.
  • Step #2 Stir the tarragon & orange zest into the vinaigrette; drizzle over the asparagus.
  • Step #3 Top with the sliced eggs.
