Creamy Pumpkin Soup Recipe

Ingredients
  • 1 tbsp sliced fresh parsley
  • 3 bacon strips, cooked & crumbled
  • 2 c milk
  • 1/4 tsp pepper
  • 1 c sour cream
  • 1/2 tsp salt
  • 1 medium onion, sliced
  • 1/2 tsp ground nutmeg
  • 2 c canned cooked pumpkin
  • 2 (14.5 oz) cans chicken broth
  • 2 c sliced peeled potatoes
  • 2 tbsps butter or margarine

Directions
  • Step #1 In a large saucepan, saute onion in butter until tender.
  • Step #2 Add the broth, potatoes & pumpkin; cook this until the potatoes are tender, about 15 mins.
  • Step #3 Remove from the heat; cool.
  • Step #4 Puree half of the mixture at a time in a mixer or food processor/blender until smooth; return all to the pan.
  • Step #5 Add the milk, nutmeg, salt & pepper; heat through.
  • Step #6 Meanwhile, mix the sour cream & parsley.
  • Step #7 Spoon soup into bowls; top each with a dollop of sour cream & sprinkle with bacon.
