2 small summer squash, sliced into 1/2-inch cubes (about 2 c)
3/4 tsp freshly ground pepper
1 small onion, coarsely sliced (1/2 c)
3 tbsps butter
12 large eggs, lightly beaten
2 small zucchini, sliced into 1/2-inch cubes (about 2 c)
1/3 c sliced fresh basil leaves
Directions
Step #1 Melt 3 Tbsp.
Step #2 butter in a 10-inch ovenproof skillet over medium-high heat; add sliced zucchini, & onion, squash, & sauté 12 to 14 mins or until onion is tender.
Step #3 Remove skillet from heat.
Step #4 Whisk together eggs & next 3 ingredients until well mixed.
Step #5 Pour over vegetable mixture in skillet.
Step #6 Bake at 350° for 33 to 35 mins or until edges are lightly browned & center is set.
Step #7 Sprinkle top evenly with sliced fresh basil.
