Summer Squash Frittata Recipe

Ingredients
  • 1/2 c sour cream
  • 1 tsp kosher salt
  • 2 small summer squash, sliced into 1/2-inch cubes (about 2 c)
  • 3/4 tsp freshly ground pepper
  • 1 small onion, coarsely sliced (1/2 c)
  • 3 tbsps butter
  • 12 large eggs, lightly beaten
  • 2 small zucchini, sliced into 1/2-inch cubes (about 2 c)
  • 1/3 c sliced fresh basil leaves

Directions
  • Step #1 Melt 3 Tbsp.
  • Step #2 butter in a 10-inch ovenproof skillet over medium-high heat; add sliced zucchini, & onion, squash, & sauté 12 to 14 mins or until onion is tender.
  • Step #3 Remove skillet from heat.
  • Step #4 Whisk together eggs & next 3 ingredients until well mixed.
  • Step #5 Pour over vegetable mixture in skillet.
  • Step #6 Bake at 350° for 33 to 35 mins or until edges are lightly browned & center is set.
  • Step #7 Sprinkle top evenly with sliced fresh basil.
