Herbed Bread-stuffed Tomatoes Recipe

Ingredients
  • 1 tsp minced fresh oregano
  • 1 tbsp minced fresh basil
  • 2 tbsps grated fresh Parmesan cheese
  • 1 tsp minced garlic
  • 1 1/2 tbsps extravirgin olive oil
  • 6 ripe firm plum tomatoes (about 1 1/2 lbs), cut in half lengthwise
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp minced fresh thyme
  • 4 oz whole wheat bread (about 2 slices), toasted & cut into 1/2-inch cubes
  • 1/2 tsp kosher salt, divided

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Scoop pulp & seeds from tomato halves into a sieve over a bowl; press with a spoon.
  • Step #3 Reserve 1/4 c liquid in bowl.
  • Step #4 Discard pulp mixture.
  • Step #5 Place tomato halves, cut sides up, in an 11 x 7-inch baking dish.
  • Step #6 Sprinkle top with 1/4 tsp salt & pepper.
  • Step #7 Place bread in a bowl; drizzle with tomato liquid.
  • Step #8 Stir in remaining 1/4 tsp salt, thyme, basil, oil, oregano, & garlic.
  • Step #9 Fill tomato halves with bread stuffing, pressing carefully.
  • Step #10 Sprinkle top each with 1/2 tsp cheese.
  • Step #11 Bake at 375° for 12 mins or until thoroughly heated.
