1/4 c (1 oz) shredded smoked cheddar or smoked mozzarella cheese
1/2 tsp hot sauce (such as Tabasco)
Green onion strips (optional)
1/2 c sliced onion
1 1/2 c frozen Southern-style hash brown potatoes (such as Ore-Ida)
1/2 tsp salt
4 large egg whites
1/8 tsp black pepper
1/3 c sliced Canadian bacon (about 2 oz)
2 tbsps sliced green onions
Directions
Step #1 Preheat broiler.
Step #2 Heat a 10-inch nonstick skillet coated with cooking spray over medium-high heat.
Step #3 Add potatoes, onion, & bacon; saute 8 mins or until potatoes are golden brown.
Step #4 Remove from pan.
Step #5 Wipe pan clean with paper towels; recoat with cooking spray.
Step #6 Combine salt, hot sauce, eggs, pepper, & egg whites in a medium bowl, stirring with a whisk.
Step #7 Stir in potato mixture, cheese, & sliced green onions.
Step #8 Heat pan over med-heat/flame.
Step #9 Pour in egg mixture.
Step #10 Reduce heat to medium-low; cook 3 mins or until bottom is lightly browned, lifting edges & tilting skillet as eggs cook to allow uncooked portion to flow underneath cooked portion.
Step #11 Wrap handle of pan with foil wrap.
Step #12 Broil 2 mins or until top is lightly browned & set.
Step #13 Garnish with green onion strips, if desired.
