Golden Egg Casserole Recipe

Ingredients
  • 2 tbsps butter or margarine
  • 1/4 tsp salt
  • 1 (2 1/4-oz.) can sliced ripe black olives, drained
  • 1/2 lb ground pork sausage, cooked & drained
  • 1 tsp baking powder
  • 6 bacon slices, cooked & crumbled
  • 1 (16-oz.) container small-curd cottage cheese
  • 1/2 c all-purpose flour
  • 1 c sliced fresh mushrooms
  • 10 large eggs
  • 1 medium-size green bell pepper, sliced
  • 2 c (8 oz.) shredded Monterey Jack cheese

Directions
  • Step #1 Melt butter In a large-ish skillet over medium-high heat; add mushrooms & bell pepper, & sauté 8 mins or until tender.
  • Step #2 Remove from heat; cool slightly.
  • Step #3 Whisk together eggs & next 3 ingredients In a large-ish bowl until smooth.
  • Step #4 Stir in mushroom mixture, cottage cheese, & remaining ingredients.
  • Step #5 Pour into a greased 13- x 9-inch baking dish.
  • Step #6 Bake at 400° for 15 mins.
  • Step #7 Reduce heat to 350°; bake 15 more mins or until set & lightly browned.
