Bacon-and-egg Quesadillas Recipe

Ingredients
  • 4 bacon slices, cooked & crumbled
  •  Vegetable cooking spray
  • 1/2 tsp seasoned salt
  • 1 (8-oz) package shredded Mexican four-cheese mix
  • 2 tbsps minced onion
  • 1/2 c sliced ham
  • 1/2 c salsa
  • 1/2 tsp seasoned pepper
  • 4 (10-inch) flour tortillas
  • 2 tbsps finely sliced green bell pepper
  • 1/2 c Ranch dressing
  • 6 pickled jalapeño pepper slices, finely sliced
  • 6 large eggs

Directions
  • Step #1 Whisk together first 6 ingredients.
  • Step #2 Cook in a lightly greased large skillet over med-heat/flame, without stirring, until eggs begin to set on bottom.
  • Step #3 Draw a spatula across bottom of skillet to form large curds.
  • Step #4 Continue cooking until eggs are thickened but still moist.
  • Step #5 (Do not stir constantly.
  • Step #6 ) Remove egg mixture from skillet, & set aside.
  • Step #7 Wipe skillet clean.
  • Step #8 Stir together Ranch dressing & salsa; set aside.
  • Step #9 Sprinkle top 1/4 c cheese evenly onto half of each tortilla; top evenly with one-fourth of egg mixture, bacon, & ham.
  • Step #10 Top each half with 1/4 c extra cheese.
  • Step #11 Fold tortilla in half over filling, pressing carefully to seal.
  • Step #12 Heat skillet coated with cooking spray over medium-high heat.
  • Step #13 Add quesadillas, in 2 batches, & cook 3 to 4 mins on each side or until golden brown.
  • Step #14 Serve with salsa mixture.
