Veggie Scramble Recipe

Ingredients
  • 1/2 c (2 oz) shredded reduced-fat sharp Cheddar cheese
  • 1/2 small red bell pepper
  • 8 large eggs, lightly beaten
  • 1/4 tsp salt
  • 1/2 small green bell pepper
  • 1/2 tsp freshly ground pepper
  •  Vegetable cooking spray
  • 1/4 small sweet onion

Directions
  • Step #1 Chop bell peppers & onion.
  • Step #2 Cook In a large-ish skillet coated with cooking spray over medium-high heat 5 mins or until vegetables are tender.
  • Step #3 Whisk together eggs, salt, & pepper.
  • Step #4 Add mixture to skillet, without stirring, & cook, until eggs begin to set on bottom.
  • Step #5 Draw a spatula across bottom of skillet to form large curds.
  • Step #6 Sprinkle top with cheese, & continue cooking until eggs are thickened but still moist.
  • Step #7 (Do not stir constantly.
  • Step #8 ) Remove from heat.
  • Step #9 Serve as soon as possible with whole-grain toast.
