Southwestern Barley "grits" Recipe

Ingredients
  • 1 tsp chili powder
  • 1 1/4 c uncooked pearl barley
  •  Hot sauce (optional)
  • 1 c (4 oz) shredded sharp cheddar cheese
  • 1 tbsp honey
  • 3 c 1% low-fat milk
  • 3/4 tsp salt
  • 3 c water
  • 1 (4.5-oz) can sliced green chiles, drained
  • 6 tbsps reduced-fat sour cream

Directions
  • Step #1 Place 1/3 c barley in a mixer; process until coarsely ground (about 15 to 20 seconds).
  • Step #2 Place ground barley In a large-ish saucepan.
  • Step #3 Repeat procedure with remaining barley.
  • Step #4 Cook barley over med-heat/flame 4 mins or until toasted, stirring frequently.
  • Step #5 Add water, milk, honey, & salt; bring to a boil.
  • Step #6 Reduce heat; simmer 25 mins or until barley is soft, stirring frequently.
  • Step #7 Add cheese, chili powder, & chiles; cook 5 mins or until cheese melts, stirring constantly.
  • Step #8 Top each serving with 1 tbsp sour cream.
  • Step #9 Serve with hot sauce, if desired.
