Ingredients
4 (8-oz) packages presliced mushrooms
1 tbsp water
8 sheets frozen phyllo dough, thawed
2 tbsps dry Marsala or Madeira
1/4 tsp freshly ground black pepper
1/4 c sliced fresh parsley
1/8 tsp sugar
Cooking spray
1 tsp olive oil
1/3 c dry breadcrumbs, divided
1 1/2 c sliced shallots (about 8 oz)
2/3 c low-fat sour cream
1/2 tsp minced fresh or 1/4 tsp dried thyme
1 tbsp butter, melted
1/2 tsp salt
Directions
Step #1 Preheat oven to 400°.
Step #2 Heat olive oil In a large-ish skillet over med-heat/flame.
Step #3 Add shallots & sugar; cook for 2 mins, stirring constantly.
Step #4 Sprinkle top with water; cover, & cook for 10 mins, reduce heat to medium-low, stirring every once in awhile until shallots are soft.
Step #5 Add mushrooms; cook, uncovered, over medium-high heat 20 mins or until liquid evaporates, stirring frequently.
Step #6 Add Marsala; cook 1 min.
Step #7 Remove from heat, & cool.
Step #8 Stir in sour cream, parsley, salt, thyme, & pepper.
Step #9 Place 1 phyllo sheet on a large cutting board or work surface (cover remaining dough to keep from drying), & lightly coat with cooking spray.
Step #10 Sprinkle top with about 2 tsps breadcrumbs.
Step #11 Repeat the layers with 3 phyllo sheets, cooking spray, & breadcrumbs, ending with the phyllo.
Step #12 Spoon 1 3/4 c mushroom mixture along 1 long edge of phyllo, leaving a 1-inch border.
Step #13 Starting at the long edge with the 1-inch border, roll up jelly roll fashion.
Step #14 Place strudel, seam side down, on a baking sheet coated with cooking spray.
Step #15 Tuck ends under.
Step #16 Repeat the procedure with the remaining phyllo sheets, breadcrumbs, cooking spray, & mushroom mixture.
Step #17 Brush strudels with butter.
Step #18 Bake strudels at 400° for 20 mins.
Step #19 Let stand for 5 mins.
Step #20 Cut each strudel into 4 slices.
