Cinnamon-apple Muffins Recipe

Ingredients
  • 2 tsps ground cinnamon
  • 3 tbsps vegetable oil
  • 2 large egg whites
  • 1 large egg
  • 1 c sugar
  • 1/3 c light ricotta cheese
  •  Cooking spray
  • 1 c low-fat buttermilk
  • 1/3 c 2% low-fat milk
  • 1 1/2 c finely sliced peeled Granny Smith apple
  • 2 1/3 c all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp vanilla extract
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsps sugar
  • 2 tsps ground cinnamon

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 6 ingredients In a large-ish bowl.
  • Step #3 Stir in apple, & make a well in center of mixture.
  • Step #4 Combine buttermilk & next 6 ingredients (buttermilk through egg); stir well with a whisk.
  • Step #5 Add to flour mixture, stirring just until moist.
  • Step #6 Spoon batter into 18 muffin c coated with cooking spray.
  • Step #7 Combine 3 tbsps sugar & 2 tsps cinnamon; sprinkle evenly over batter.
  • Step #8 Bake at 400° for 18 mins or until done.
  • Step #9 Remove from pans as soon as possible; cool on a wire rack.
