Country Sausage Patties Recipe

Ingredients
  •  Cooking spray
  • 1 tsp freshly ground black pepper
  • 1/4 c cold water
  • 1 tsp minced fresh or 1/4 tsp dried rubbed sage
  • 1 tsp dark brown sugar
  • 1 tsp crushed red pepper
  • 1/4 tsp grated whole nutmeg
  • 1 tsp salt
  • 1/2 tsp ground coriander
  • 1 tsp minced fresh or 1/4 tsp dried thyme
  • 1/2 tsp hot pepper sauce (such as Tabasco)
  • 1 1/2 lbs boneless Boston butt pork roast, trimmed & cut into 1-inch cubes

Directions
  • Step #1 Place half of pork in food processor/blender; pulse until coarsely ground.
  • Step #2 Place pork In a large-ish bowl.
  • Step #3 Repeat procedure with remaining pork.
  • Step #4 Add water & remaining ingredients except cooking spray.
  • Step #5 Knead mixture until well mixed.
  • Step #6 Cover up & put in the fridge mixture 8 hrs or overnight.
  • Step #7 Divide mixture into 16 equal portions, shaping each into a 1/2-inch-thick patty.
  • Step #8 Heat a large nonstick skillet over medium-high heat.
  • Step #9 Coat pan with cooking spray.
  • Step #10 Add half the patties; cook 6 mins.
  • Step #11 Turn patties over; cook 5 mins or until done.
  • Step #12 Repeat procedure with remaining patties.
