Chicken Claridge Stew Recipe

Ingredients
  • 1 (14.5 oz) can sliced tomatoes
  • 4 carrots, sliced
  • 2 stalks celery, sliced
  • 1/4 tsp dried sage
  • salt & pepper to taste
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 onion, sliced
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 3 skinless, boneless chicken breast halves - cut into cubes
  • 1 c chicken broth
  • 1 clove garlic, minced

Directions
  • Step #1 Spray a large skillet with cooking spray.
  • Step #2 Saute the chicken in the oil.
  • Step #3 Add the onion & saute until translucent.
  • Step #4 Add the celery & carrots & saute briefly.
  • Step #5 Add the chicken soup, mushroom soup, water or broth, salt & pepper, sage & garlic.
  • Step #6 Do not add the tomatoes yet as they retard cooking time.
  • Step #7 Bring all to a boil, then cover & let simmer for about 20 mins.
  • Step #8 Add the tomatoes & let simmer for 10 more mins, uncovered.
  • Step #9 Serve over hot cooked rice if desired.
  • Step #10 Delicious!.
