Step #1 Combine flour & next 3 ingredients in a bowl; whisk in 1 1/8 c milk & egg, whisking until mixture is mixed.
Step #2 Grease heavy metal cookie cutters lightly, & place on hot (375°), lightly greased griddle.
Step #3 Pour pancake batter (approximately 2 tbsps) into each cutter.
Step #4 Using tongs, remove cutters after 1 min (cutters will be hot); cook pancakes 2 more mins.
Step #5 Turn pancakes over, & cook 2 to 3 more mins or until done.
Step #6 Pecan Pancakes: Stir 1/2 c sliced toasted pecans into batter.
Step #7 Proceed as directed.
Step #8 Banana Pancakes: Stir 1 c sliced banana (2 bananas) into batter.
Step #9 Proceed as directed.
