Lemon-scented Olive Oil Muffins Recipe

Ingredients
  • 1 c all-purpose flour (about 4 1/2 oz)
  •  Muffins:
  • 1 large egg
  • 1/2 tsp grated lemon rind
  • 1 1/2 tbsps grated lemon rind
  •  Grated lemon rind (optional)
  • 2 tbsps extravirgin olive oil
  •  Glaze:
  • 1/2 c granulated sugar
  • 1 1/2 tbsps fat-free milk
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 c fat-free sour cream
  • 2 tsps fresh lemon juice
  • 1 large egg white
  • 3 tbsps fresh lemon juice
  •  Cooking spray
  • 1 c sifted powdered sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 To prepare muffins, lightly spoon flour into a dry measuring c; level with a knife.
  • Step #3 Combine flour, baking powder, sugar, & salt In a large-ish bowl; stir well with a whisk.
  • Step #4 Make a well in center of mixture.
  • Step #5 Combine sour cream & next 6 ingredients (through egg white) in a small bowl; stir with a whisk until well mixd.
  • Step #6 Add to flour mixture, stirring just until moist.
  • Step #7 Spoon batter evenly into 10 muffin c coated with cooking spray.
  • Step #8 Bake at 350° for 25 mins or until muffins spring back when touched lightly in center.
  • Step #9 Remove from pans as soon as possible.
  • Step #10 Cool completely on a wire rack.
  • Step #11 To prepare glaze, 1/2 tsp rind, mix powdered sugar, & 3 tbsps juice in a small bowl; stir with a whisk until smooth.
  • Step #12 Spread about 1 tsp glaze over each muffin; let this stand 5 mins or until set.
  • Step #13 Garnish with lemon rind, if desired.
