Lemon-poppy Seed Muffins Recipe

Ingredients
  • 2 c all-purpose flour
  •  Cooking spray
  • 1 tsp baking powder
  • 3 tbsps vegetable oil
  • 1/2 c sugar
  • 2 tbsps fresh lemon juice
  • 1 large egg, lightly beaten
  • 1 tsp baking soda
  • 1 tsp grated lemon rind
  • 1/4 tsp salt
  • 2 tbsps poppy seeds
  • 1 (8-oz) carton lemon low-fat yogurt

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 6 ingredients in a medium bowl; make a well in center of mixture.
  • Step #3 Combine oil, rind, yogurt, juice, & egg; stir well.
  • Step #4 Add to dry ingredients, stirring just until moist.
  • Step #5 Spoon batter into each of 12 muffin c coated with cooking spray.
  • Step #6 Bake at 400° for 14 mins or until golden.
  • Step #7 Remove muffins from pan as soon as possible; place on a wire rack.
