Sour Cream Raspberry Swirl Loaf Recipe

Ingredients
  • 1 large egg white
  • 1/8 tsp salt
  • 1 1/2 c all-purpose flour
  • 1 1/8 tsps vanilla extract, divided
  • 3/4 c fat-free sour cream
  • 3/4 c sugar
  • 1/4 tsp baking soda
  • 1 1/2 tsps 2% reduced-fat milk
  • 1/3 c seedless raspberry jam
  • 1 tsp baking powder
  • 2 tsps grated lemon rind
  •  Cooking spray
  • 1/4 c butter, softened
  • 1 large egg
  • 1/4 c sifted powdered sugar
  • 3 tbsps sliced walnuts, toasted

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine raspberry jam & walnuts in a small bowl.
  • Step #3 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #4 Combine flour, & salt in a bowl, baking soda, baking powder, stirring with a whisk.
  • Step #5 Combine sugar, 1 tsp vanilla, lemon rind, butter, egg, & egg white In a large-ish bowl; beat with a mixer at medium speed until well mixed.
  • Step #6 Add flour mixture & sour cream alternately to sugar mixture, beginning & ending with flour mixture.
  • Step #7 Spread half the batter into an 8 x 4-inch loaf pan coated with cooking spray.
  • Step #8 Spoon raspberry mixture over top, leaving a 1/4-inch border.
  • Step #9 Spread remaining batter over raspberry mixture.
  • Step #10 Bake at 350° for 55 mins or until wooden pick inserted in center comes out clean.
  • Step #11 Cool in pan 10 mins on a wire rack; remove this from pan.
  • Step #12 Cool completely on wire rack.
  • Step #13 Combine 1/8 tsp vanilla , & milk in a small bowl, powdered sugar, stirring well with a whisk.
  • Step #14 Drizzle over loaf.
