5 c sliced peeled Golden Delicious or Rome apple (about 4 large)
1 1/2 c all-purpose flour
2 tbsps granulated sugar, divided
1/8 tsp ground nutmeg
1/2 c packed brown sugar
1/4 tsp baking soda
1/4 tsp ground nutmeg
1/4 tsp salt
1/3 c granulated sugar
3 tbsps all-purpose flour
3/4 c low-fat buttermilk
2 1/2 tbsps vegetable oil
Cooking spray
1/2 c raisins
1 1/2 tsps grated lemon rind
1/4 c egg substitute
Directions
Step #1 Preheat oven to 475°.
Step #2 Arrange apples in a single layer on a jelly-roll pan coated with cooking spray, & sprinkle with 1 tbsp granulated sugar.
Step #3 Bake at 475° for 8 mins, stirring well.
Step #4 Sprinkle top with 1 tbsp granulated sugar; bake an extra 7 mins or until apples are slightly soft.
Step #5 Cool.
Step #6 Reduce the oven temperature to 375°.
Step #7 Lightly spoon 1 1/2 c flour into dry measuring c; level with a knife.
Step #8 Combine with next 6 ingredients (flour through 1/8 tsp nutmeg).
Step #9 Combine buttermilk, & rind, oil, egg substitute, stirring well with a whisk.
Step #10 Add to flour mixture, stirring just until moist.
Step #11 Gently fold in apples & raisins.
Step #12 Spoon mixture into a 10-inch springform pan coated with cooking spray; place pan on a baking sheet.
Step #13 Combine brown sugar, 3 tbsps flour, 1/2 tsp cinnamon, & 1/4 tsp nutmeg; cut in margarine & corn syrup with a pastry mixer or 2 knives until the mixture resembles coarse meal.
Step #14 Sprinkle top evenly over batter in pan.
Step #15 Bake at 375° for 50 mins or until a wooden pick inserted in center comes out clean.
