Ham And Asparagus Frittata Recipe

Ingredients
  • 1/4 tsp black pepper
  • 1/2 c (2 oz) shredded low-fat Jarlsberg cheese
  • 1/8 tsp salt
  • 1/2 c finely sliced onion
  • 2 large eggs
  •  Cooking spray
  • 3 large egg whites
  • 1/2 c finely sliced bell pepper
  • 2/3 c sliced 33%-less-sodium ham (about 3 oz)
  • 1/2 c (1-inch) slices asparagus
  • 1/4 tsp Italian seasoning

Directions
  • Step #1 Preheat broiler.
  • Step #2 Combine ham, salt, black pepper, cheese, & eggs, egg whites, stirring well with a whisk.
  • Step #3 Heat a 9-inch nonstick skillet coated with cooking spray over medium-high heat.
  • Step #4 Add onion, bell pepper, & asparagus; sauté 3 mins.
  • Step #5 Add egg mixture; reduce heat to medium.
  • Step #6 Cook, covered, 3 mins or until almost set.
  • Step #7 Sprinkle top with 1/4 tsp Italian seasoning.
  • Step #8 Wrap handle of pan with foil wrap; broil 3 mins or until egg is set.
  • Step #9 Cut into 4 wedges.
