Southwestern Omelet Recipe

Ingredients
  •  Cooking spray
  • 1/4 c (1 oz) reduced-fat shredded cheddar cheese
  • 2 tbsps sliced fresh cilantro
  • 1/4 c bottled salsa
  • 1/2 c canned black beans, rinsed & drained
  • 1/4 c sliced green onions
  • 1 large egg
  • 1/4 tsp salt
  • 4 large egg whites

Directions
  • Step #1 Combine first 4 ingredients in a medium bowl, stirring with a whisk.
  • Step #2 Combine beans, onions, cheese, & salsa in a medium bowl.
  • Step #3 Heat a medium nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #4 Pour egg mixture into pan; let egg mixture set slightly.
  • Step #5 Tilt pan & carefully lift edges of omelet with a spatula; allow uncooked portion to flow underneath cooked portion.
  • Step #6 Cook 3 mins; flip omelet.
  • Step #7 Spoon bean mixture onto half of omelet.
  • Step #8 Carefully loosen omelet with a spatula; fold in half.
  • Step #9 Cook 1 min or until cheese melts.
  • Step #10 Slide omelet onto a plate; cut in half.
