Vegetable-and-cheese Strata Recipe

Ingredients
  •  Oregano sprigs (optional)
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1 c sliced red bell pepper
  • 2 c sliced zucchini
  • 1/2 tsp dry mustard
  • 1/4 c (1 oz) grated fresh Parmesan cheese
  • 1 1/2 c egg substitute
  •  Cooking spray
  • 1 c (4 oz) shredded reduced-fat extra-sharp cheddar cheese
  • 2 garlic cloves, crushed
  • 1 tsp dried Italian seasoning
  • 8 c (1-inch) cubed Italian bread (about 8 oz)
  • 1 c sliced onion
  • 3/4 c sliced drained canned artichoke hearts
  • 2 c sliced mushrooms
  • 1/4 tsp pepper
  • 1 (12-oz) can evaporated skim milk

Directions
  • Step #1 Heat oil in a nonstick skillet over medium-high heat.
  • Step #2 Add zucchini, mushrooms, onion, & garlic, bell pepper, & sauté vegetable mixture 6 mins or until tender.
  • Step #3 Remove from heat.
  • Step #4 Stir in artichokes, & set aside.
  • Step #5 Arrange Italian bread cubes in a 13 x 9-inch baking dish coated with cooking spray.
  • Step #6 Spoon zucchini mixture evenly over bread cubes, & sprinkle mixture with cheeses.
  • Step #7 Combine egg substitute & remaining ingredients (except oregano sprigs) In a large-ish bowl; stir with a whisk.
  • Step #8 Pour egg mixture over zucchini mixture.
  • Step #9 Cover up mixture with foil wrap; chill up to 1 day.
  • Step #10 Preheat oven to 325°.
  • Step #11 Bake strata, covered, 1 hr or until bubbly.
  • Step #12 Garnish with oregano sprigs, if desired.
