Banana Nut Muffins With Oatmeal Streusel Recipe

Ingredients
  •  Streusel:
  • 1/4 c sliced walnuts, toasted
  •  Muffins:
  • 3 tbsps canola oil
  • 1 1/2 c all-purpose flour (about 6 3/4 oz)
  • 1/2 tsp vanilla extract
  • 3/4 c 1% low-fat milk
  • 2 tbsps butter, softened
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/2 c whole wheat flour (about 2 1/2 oz)
  • 1 large egg
  • 2 tsps baking powder
  • 5 tbsps all-purpose flour (about 1 1/2 oz)
  • 1 c mashed ripe banana (about 2 bananas)
  • 2/3 c packed brown sugar
  • 6 tbsps regular oats
  • 2 tbsps brown sugar
  • 1/4 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 To prepare the muffins, lightly spoon 1 1/2 c all-purpose flour & whole wheat flour into dry measuring c; level with a knife.
  • Step #3 Combine flours & next 4 ingredients (through salt) In a large-ish bowl; make a well in center of mixture.
  • Step #4 Combine banana & next 4 ingredients (through egg) in a bowl; stir well.
  • Step #5 Add to flour mixture.
  • Step #6 Stir just until moistened; fold in walnuts.
  • Step #7 Place 12 muffin c liners in muffin c.
  • Step #8 Spoon batter into 12 muffin c.
  • Step #9 To prepare streusel, mix oats & remaining ingredients in a small bowl.
  • Step #10 Blend with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #11 Sprinkle top streusel over batter.
  • Step #12 Bake at 375° for 22 mins or until a wooden pick inserted in center comes out clean.
