Southern Shrimp And Grits Recipe

Ingredients
  • 1 1/2 lbs peeled & deveined large shrimp
  • 1 tbsp butter
  • 2 bacon slices, sliced
  • 1/4 c frozen sliced green bell pepper
  • 3 tbsps fresh lemon juice
  • 1/2 tsp hot sauce (such as Tabasco)
  • 1 tsp salt
  • 1 1/2 c uncooked quick-cooking grits
  • 3/4 c (3 oz) shredded sharp cheddar cheese
  • 1 c fat-free, less-sodium chicken broth
  • 1/2 c sliced green onions, divided
  • 1 c frozen sliced onion
  • 1 1/2 tsps bottled minced garlic
  • 5 c water

Directions
  • Step #1 Combine first 3 ingredients; set aside.
  • Step #2 Cook bacon In a large-ish nonstick skillet over med-heat/flame until crisp.
  • Step #3 Add onion, bell pepper, & garlic to drippings in pan; cook 5 mins or until tender, stirring every once in awhile.
  • Step #4 Stir in shrimp mixture, & 1/4 c green onions; cook 5 mins or until shrimp are done, broth, stirring frequently.
  • Step #5 Bring water to a boil in a medium saucepan; slowly add grits, stirring constantly.
  • Step #6 Reduce heat to low; simmer, for 5 mins or until thick, covered, stirring every once in awhile.
  • Step #7 Stir in butter & salt.
  • Step #8 Serve shrimp mixture over grits; sprinkle with cheese & remaining green onions.
