Sourdough-sausage Quiches Recipe

Ingredients
  • 1/3 c butter or margarine, melted
  • 1/4 tsp pepper
  •  Vegetable cooking spray
  • 2 (16-oz) loaves sliced sourdough bread
  • 1/2 c (2 oz) finely shredded mozzarella cheese
  • 1/4 tsp salt
  • 1/4 c minced celery
  • 3/4 c half-and-half
  • 3 large eggs, lightly beaten
  • 1/2 tsp poultry seasoning
  • 1/4 lb hot ground pork sausage
  • 3 tbsps minced onion
  • 1/8 tsp rubbed sage
  •  Garnish: celery leaves

Directions
  • Step #1 Cut bread slices into 40 rounds, using a 3" biscuit cutter.
  • Step #2 Roll each bread round lightly with a rolling pin.
  • Step #3 Brush both sides of each round lightly with melted butter.
  • Step #4 Press into miniature (1 3/4") muffin pans lightly coated with cooking spray.
  • Step #5 Bake at 350° for 20 mins or until crisp & golden.
  • Step #6 Cook sausage, & onion in a skillet over medium-high heat until sausage is browned, celery, stirring until sausage is finely crumbled; drain.
  • Step #7 Combine sausage mixture, eggs, & next 6 ingredients in a medium bowl; stir well.
  • Step #8 Spoon into prepared toast c, filling three-fourths full.
  • Step #9 Bake at 350° for 15 mins or until set.
  • Step #10 Serve warm.
  • Step #11 Garnish, if desired.
