Starbucks' Low-fat Date Scones Recipe

Ingredients
  • 3 tbsps chilled stick margarine, cut into small pieces
  • 1/2 c whole-wheat flour
  • 1/4 c unprocessed wheat bran
  • 1/2 tsp salt
  • 2/3 c sliced pitted dates
  • 1 1/2 tsps baking powder
  • 2 tsps ground cinnamon
  • 2/3 c vanilla low-fat yogurt
  • 1 1/2 c all-purpose flour
  •  Vegetable cooking spray
  • 1/4 c firmly packed brown sugar
  • 1 1/2 tsps baking soda
  • 2 egg whites, lightly beaten

Directions
  • Step #1 Combine first 8 ingredients in a bowl; cut in margarine with a pastry mixer until the mixture resembles coarse meal.
  • Step #2 Add dates; toss well.
  • Step #3 Add yogurt & egg whites, stirring just until dry ingredients are moistened (dough will be sticky).
  • Step #4 Turn dough out onto a lightly floured surface; with floured hands, knead lightly 3 to 4 times.
  • Step #5 Pat dough into an 8-inch circle on a baking sheet coated with cooking spray.
  • Step #6 Cut dough into 10 wedges, cutting into but not through dough.
  • Step #7 Bake at 350° for 25 mins or until loaf sounds hollow when tapped.
