1 medium pineapple, peeled, cored, & cut crosswise into 8 slices
Remaining ingredients:
1 c light coconut milk
1/2 c granulated sugar
Directions
Step #1 To prepare salsa, mix first 4 ingredients; cover & chill in the fridge.
Step #2 Preheat oven to 400°.
Step #3 To prepare French toast, mix egg substitute & next 6 ingredients (egg substitute through eggs) In a large-ish bowl, stirring well with a whisk.
Step #4 Place bread in egg mixture; press down with spatula to completely submerge bread in egg mixture.
Step #5 Let stand 15 mins.
Step #6 Arrange soaked bread in a single layer on a jelly roll pan coated with cooking spray.
Step #7 Bake at 400° for 12 mins or until set.
Step #8 Remove from oven, & keep warm.
Step #9 While bread bakes, heat a grill pan over medium-high heat.
Step #10 Coat pan with cooking spray.
Step #11 Arrange 4 pineapple slices in pan; cook 4 mins on each side or until pineapple begins to brown.
Step #12 Remove from pan; keep warm.
Step #13 Repeat procedure with remaining pineapple & cooking spray.
Step #14 Arrange 2 toast pieces on each of 8 plates; top each serving with 1 pineapple slice & 1/2 c salsa.
Step #15 Sprinkle top with powdered sugar, if desired.
