Smothered-covered Hash Browns Recipe

Ingredients
  • 3 tbsps vegetable oil, divided
  • 1 tsp salt
  • 1 medium onion, sliced
  • 8 American cheese slices
  • 1/2 tsp pepper
  • 1 (16-oz) package frozen shredded hash browns, thawed

Directions
  • Step #1 Sauté onion in 1 tbsp hot vegetable oil over med-heat/flame 8 mins or until tender.
  • Step #2 Stir together onion, salt, hash browns, & pepper In a large-ish bowl.
  • Step #3 Heat 1 tbsp oil In a large-ish non-stick skillet over medium-high heat.
  • Step #4 Drop hash brown mixture into 3 1/2-inch rounds.
  • Step #5 Cook, 5 mins on each side, or until lightly browned, in batches, adding remaining oil as necessary.
  • Step #6 Press down with a spatula to flatten; top each round with a cheese slice.
  • Step #7 Cook 5 mins.
