Lemon-poppy Seed Muffins Recipe

Ingredients
  • 1 large egg, lightly beaten
  • 2 tsps fresh lemon juice
  • 2 tsps baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tbsps grated lemon rind
  • 2 tbsps powdered sugar
  • 3 tbsps butter, melted
  • 2 c all-purpose flour
  • 1 tbsp poppy seeds
  • 1/2 c honey
  •  Cooking spray
  • 2 tbsps honey
  • 3/4 c low-fat buttermilk
  • 1/4 tsp salt
  • 2 tbsps powdered sugar

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #3 Combine flour & next 6 ingredients (flour through salt) In a large-ish bowl, & make a well in center of mixture.
  • Step #4 Combine buttermilk, butter, 1/2 c honey, & egg; stir well with a whisk.
  • Step #5 Add to flour mixture, stirring just until moist.
  • Step #6 Spoon the batter into 12 muffin c coated with cooking spray.
  • Step #7 Bake at 375° for 19 mins or until muffins spring back when touched lightly in center.
  • Step #8 Combine 2 tbsps powdered sugar, 2 tbsps honey, & lemon juice in a small bowl.
  • Step #9 Brush glaze over tops of muffins.
  • Step #10 Place on a wire rack.
