Golden Onions And Eggs On Toast Recipe

Ingredients
  •  Salt
  • 2 tbsps butter or margarine
  • 1 c fat-skimmed chicken broth
  • 8 slices country-style bread (3/4 in. thick; 1/2 lb. total), toasted
  • 6 hard-cooked large eggs
  •  Minced parsley
  • 1/4 c all-purpose flour
  • 1 c low-fat milk
  • 1 1/4 lbs onions, thinly sliced

Directions
  • Step #1 In an 11- to 12-inch frying pan over medium-high heat, stir onions & butter often until onions are limp & lightly browned, about 10 mins.
  • Step #2 Meanwhile, shell eggs & chop.
  • Step #3 Mix a little broth with flour to make a smooth paste, then add to remaining broth & mix into onion mixture.
  • Step #4 Add milk & stir over high heat until boiling, then stir about 2 mins more.
  • Step #5 Add eggs to sauce & mix well.
  • Step #6 Spoon sauce onto toast.
  • Step #7 Sprinkle top with parsley & add salt to taste.
