Orange-apricot Sweet Bread Recipe

Ingredients
  • 1/2 c sour cream
  • 1/4 tsp baking soda
  •  About 2/3 c sugar
  • 1 large egg
  • 1 tbsp finely shredded orange peel
  •  About 1 c all-purpose flour
  • 1 large egg yolk
  •  About 1/2 c (1/4 lb.) butter or margarine
  • 3/4 tsp baking powder
  • 1/2 tsp hulled cardamom seed, crushed
  • 1/2 c sliced dried apricots

Directions
  • Step #1 In a bowl, 2/3 c sugar, beat 1/2 c butter, & cardamom with a mixer until fluffy.
  • Step #2 Add orange peel, egg yolk, egg, & sour cream.
  • Step #3 Beat to mix well.
  • Step #4 Stir together soda, baking powder, 1 c flour, & sliced apricots.
  • Step #5 Add to butter mixture & stir until evenly mixed.
  • Step #6 Butter & flour-dust a 5- to 6-c baking pan or paper baking mold (5 in.
  • Step #7 wide, 3 in.
  • Step #8 deep; 7 in.
  • Step #9 wide, 2 1/2 in.
  • Step #10 deep; 4 1/2- by 8 1/2 -in.
  • Step #11 loaf pan; or 8-in.
  • Step #12 square or round cake pan).
  • Step #13 Scrape batter into pan & spread level.
  • Step #14 If using smaller molds, fill no more than 1/3 full.
  • Step #15 (You'll have about 1 1/2 c batter.
  • Step #16 ) Sprinkle top batter evenly (in one or more pans) with 1 tbsp sugar.
  • Step #17 Bake on rack slightly below center in a 350° oven until bread springs back when lightly pressed in center, 35 to 40 mins for the whole loaf, & just begins to pull from pan sides, less for smaller portions.
  • Step #18 Let cool on a rack.
  • Step #19 Serve warm or cool, inverted from pan, then turned top side up.
