Lemon-blueberry Muffins Recipe

Ingredients
  • 1 c fresh or frozen blueberries, thawed & drained
  • 2 egg whites
  • 1 3/4 c all-purpose flour
  • 2 tsps baking powder
  • 2 tsps grated lemon rind
  • 1/4 tsp salt
  •  Vegetable cooking spray
  • 1/4 c vegetable oil
  • 3/4 c fat-free milk
  • 1 tsp vanilla extract
  • 1/2 c sugar

Directions
  • Step #1 Combine first 3 ingredients In a large-ish mixing bowl; add blueberries, & carefully toss to coat.
  • Step #2 Make a well in center of mixture.
  • Step #3 Stir together milk, sugar, & next 3 ingredients; add to dry ingredients, stirring just until moistened.
  • Step #4 Beat egg whites at medium speed with an electric mixer 1 min or until soft peaks form; fold into batter.
  • Step #5 Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
  • Step #6 Bake at 350° for 20 to 25 mins or until done.
