Asparagus Tart Recipe

Ingredients
  • 2 tbsps nonfat dry milk
  • 1 lb fresh asparagus
  • 1 (10-inch) Greek Baking-Powder Piecrust
  • 1/4 c sliced fresh chives
  • 1/4 tsp pepper
  • 1/4 c (1 oz) shredded Gruyère or Swiss cheese
  • 1 tsp sliced fresh or 1/4 tsp dried thyme
  • 3/4 c skim milk
  • 2 large eggs
  • 2 large egg whites
  •  Cooking spray
  • 1/4 tsp salt
  • 1/4 c (1 oz) finely grated fresh Parmesan cheese

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Press Greek Baking-Powder Piecrust into a 10-inch quiche dish coated with cooking spray.
  • Step #3 Combine eggs & egg whites in a medium bowl; beat well with a whisk.
  • Step #4 Brush 2 tbsps egg mixture over crust; set remaining egg mixture aside.
  • Step #5 Bake at 375° for 7 mins; cool on a wire rack.
  • Step #6 Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired.
  • Step #7 Cut asparagus into 5-inch pieces.
  • Step #8 Steam asparagus, covered, 5 mins or until tender.
  • Step #9 Rinse under cold water.
  • Step #10 Drain well; set aside.
  • Step #11 Add skim milk & remaining ingredients to remaining egg mixture in bowl, & beat well.
  • Step #12 Pour egg mixture into prepared crust.
  • Step #13 Arrange steamed asparagus spokelike in egg mixture, alternating stems & tips.
  • Step #14 Bake tart at 375° for 35 mins or until a knife inserted near center of tart comes out clean.
