Citrus Gazpacho Recipe

Ingredients
  • 2 tbsps fresh lime juice
  • 1/2 c sliced green bell pepper
  •  Garnish: fresh cilantro sprigs
  • 2 large oranges
  • 2 cloves garlic, minced
  • 1 c sliced plum tomatoes
  • 1/2 c reduced-sodium tomato juice
  • 1 tsp hot sauce
  • 1/4 c sliced tomatillos
  • 1 large grapefruit
  • 1/4 c ready-to-serve, reduced-sodium fat-free chicken broth
  • 1/4 c sliced English cucumber*
  • 2 tbsps sliced purple onion
  • 2 tbsps sliced fresh cilantro
  • 1/2 c reduced-sodium vegetable juice

Directions
  • Step #1 Peel, section, & seed grapefruit & oranges.
  • Step #2 Coarsely chop sections, & place this in a bowl.
  • Step #3 Add tomatoes & next 11 ingredients; cover & chill 4 hrs.
  • Step #4 Garnish, if desired.
