Banana-stuffed French Toast Recipe

Ingredients
  • 2 tsps margarine, divided
  • 1/4 tsp baking powder
  • 1/2 tsp lemon juice
  • 1 c mashed ripe banana
  • 4 large egg whites
  • 2 large eggs
  • 2 tsps vanilla extract
  • 2 tbsps brown sugar
  • 1 c skim milk
  • 4 (1-inch-thick) slices Italian bread
  • 1/2 tsp ground cinnamon
  • 1/2 c maple syrup

Directions
  • Step #1 Combine banana & lemon juice in a small bowl.
  • Step #2 Stir well; set aside.
  • Step #3 Cut bread slices in half crosswise; cut a slit through cut sides of each piece of bread to form a pocket.
  • Step #4 Stuff 2 tbsps banana mixture into pocket of each piece of bread.
  • Step #5 Combine milk & next 6 ingredients (milk through eggs) In a large-ish shallow dish, & stir well with a whisk.
  • Step #6 Arrange stuffed bread pieces in a single layer in dish, turning to coat.
  • Step #7 Cover up & chill 45 mins or until milk mixture is absorbed, turning bread pieces over after 20 mins.
  • Step #8 Melt 1 tsp margarine In a large-ish nonstick skillet over med-heat/flame; add half of bread pieces.
  • Step #9 Cook 4 mins.
  • Step #10 Carefully turn bread over; cook 3 mins or until browned.
  • Step #11 Repeat procedure with remaining margarine & bread pieces.
  • Step #12 Serve with maple syrup.
