French-countryside Frittata Recipe

Ingredients
  • 1 tsp dried thyme
  • 6 large egg whites, lightly beaten
  • 1 large egg yolk, lightly beaten
  • 2 tsps Dijon mustard
  •  Cooking spray
  • 1/4 tsp pepper
  • 1/4 c (1 oz) crumbled goat cheese with basil
  • 2 (4-oz) packages sliced specialty mushroom mix (a mix of sliced crimini, shiitake, & oyster mushrooms)
  • 3 garlic cloves, minced
  • 1 c (1/2-inch) cubed French bread
  • 1/2 c sliced red onion

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Place bread cubes in a single layer on a jelly-roll pan.
  • Step #3 Bake at 400° for 8 mins or until toasted.
  • Step #4 Increase oven temperature to 450°.
  • Step #5 Combine first 6 ingredients in a bowl; stir well.
  • Step #6 Set aside.
  • Step #7 Coat an 8-inch nonstick skillet with cooking spray, & place over med-heat/flame until hot.
  • Step #8 Add sliced red onion & garlic, & sauté 3 mins.
  • Step #9 Add mushrooms, & sauté 5 mins.
  • Step #10 Stir in bread cube mixture, & spread evenly in bottom of skillet.
  • Step #11 Cook over medium-low heat 5 mins or until almost set.
  • Step #12 Wrap handle of skillet with foil wrap; place skillet in oven, & bake this at 450° for 5 mins or until set.
  • Step #13 Sprinkle top with cheese; bake an extra min or until cheese is warm (cheese will not melt).
  • Step #14 Note: Substitute 1 c egg substitute for 6 egg whites & 1 egg yolk, if desired.
