Coffee Coffeecake Recipe

Ingredients
  • 1 1/2 c all-purpose flour
  • 1/3 c granulated sugar
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/3 c sifted powdered sugar
  • 2 1/2 tbsps stick margarine or butter, melted
  •  Cooking spray
  • 1 1/2 tsps ground cinnamon
  • 1 tsp instant espresso or 2 tsps instant coffee granules
  • 1/2 c granulated sugar
  • 2 tbsps finely sliced walnuts
  • 2 tsps 1% low-fat milk
  • 4 1/2 tsps instant espresso or 3 tbsps instant coffee granules
  • 1 large egg
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1 c plain low-fat yogurt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 3 ingredients; set aside.
  • Step #3 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #4 Combine flour, baking powder, 1/2 c granulated sugar, baking soda, & salt In a large-ish bowl.
  • Step #5 Combine yogurt, & egg; add to flour mixture, vanilla, margarine, stirring just until moist.
  • Step #6 Spread half of cake batter into an 8-inch square cake pan coated with cooking spray, & sprinkle with half of espresso mixture.
  • Step #7 Top with remaining batter, spreading to cover; sprinkle with remaining espresso mixture.
  • Step #8 Swirl batters together using a knife, & sprinkle with walnuts.
  • Step #9 Bake at 350° for 35 mins or until cake springs back when touched lightly in center.
  • Step #10 Cool on a wire rack.
  • Step #11 Combine milk & 1 tsp espresso, stirring until coffee granules dissolve, & stir in the the powdered sugar.
  • Step #12 Drizzle espresso glaze over cake.
