Gingerbread Pancakes With Pears And Yogurt Recipe

Ingredients
  • 1 tsp ground cinnamon
  • 1 tbsp light brown sugar Vanilla yogurt
  • 1 tbsp vegetable oil
  • 1 c pancake mix
  • 3 tbsps molasses
  • 1/8 tsp salt
  • 3/4 c whole milk
  • 1 egg
  • 1 tsp ground ginger
  • 2 ripe Anjou or Bartlett pears— peeled, cored, & thinly sliced

Directions
  • Step #1 Combine the pancake mix, ginger, cinnamon, & salt In a large-ish bowl.
  • Step #2 In another bowl, molasses, whisk together the egg, milk, & oil.
  • Step #3 Stir the wet ingredients into the dry & whisk just to mix.
  • Step #4 Let the batter rest according to the pancake-mix label directions (or for 5 mins if you make your own mix).
  • Step #5 While waiting, carefully toss the pears in a bowl with the brown sugar; set aside.
  • Step #6 Place a nonstick griddle or skillet coated with oil, butter, or cooking spray over medium-high heat.
  • Step #7 Spoon or pour about 1/3 c of batter for each pancake onto the griddle.
  • Step #8 Turn when bubbles rise to the surface & the edges look cooked.
  • Step #9 Repeat with the remaining batter.
