Spiced Pumpkin Bread Recipe

Ingredients
  • 3 eggs, lightly beaten
  • 2 tsps baking soda
  • 2/3 c canola oil
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 2 c sugar
  • 1 (15-oz) can pumpkin
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  •  Cooking spray
  • 3 c all-purpose flour (about 13 1/2 oz)
  • 1/2 c dried currants or raisins
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & next 7 ingredients (through nutmeg) In a large-ish bowl; make a well in center of mixture.
  • Step #4 Combine canola oil, eggs, & pumpkin in a medium bowl; stir with a whisk until smooth.
  • Step #5 Add to flour mixture, stirring just until moist.
  • Step #6 Fold in currants.
  • Step #7 Spoon batter into 2 (9 x 5-inch) loaf pans coated with cooking spray.
  • Step #8 Bake at 350° for 1 hr or until a wooden pick inserted in center comes out clean.
  • Step #9 Cool loaves in pans 10 mins on a wire rack; remove this from pans.
  • Step #10 Cool loaves completely.
