Steamed Brown Bread With Currants And Walnuts Recipe

Ingredients
  • 1/2 c all-purpose flour
  • 3/4 tsp ground cinnamon
  • 1/2 c whole-wheat flour
  • 1/3 c molasses
  • 1 c low-fat buttermilk
  • 1/2 c dried currants
  • 1/2 tsp salt
  •  Vegetable cooking spray
  • 1/2 c yellow cornmeal
  • 1/2 tsp baking soda
  • 2 tbsps sliced walnuts

Directions
  • Step #1 Combine the first 6 ingredients In a large-ish bowl, & make a well in center of mixture.
  • Step #2 Combine buttermilk & molasses; stir well.
  • Step #3 Add to flour mixture, stirring just until moistened.
  • Step #4 Fold in currants & walnuts.
  • Step #5 Spoon the mixture into a 13-oz coffee can coated with cooking spray.
  • Step #6 Cover up with aluminum foil wrap coated with cooking spray; secure foil wrap with a rubber band.
  • Step #7 Place the can in an electric slow cooker (aka crockpot); add enough hot water to cooker to come halfway up sides of can.
  • Step #8 Cover up with lid, & cook on high-heat setting for 2 hrs & 50 mins or until a wooden pick inserted in center comes out clean.
  • Step #9 Remove can from water.
  • Step #10 Let bread cool, covered, in can on a wire rack for 5 mins.
  • Step #11 Remove bread from can, & let cool completely on wire rack.
